Carlos has more than 25 years' experience as a General Manager, Resort Manager and Director of Food and Beverage for industry-leading hospitality and accommodation brands that include Norwegian Cruise Line Worldwide, Carnival Cruise Line USA, Laguna Beach Phuket, Couran Cove Island Resort, Australian Institute of Sport, and the Sydney Convention and Exhibition Centre. His breadth of hands-on insights has been earned by running food kiosks, cafés and restaurant teams of executive chefs, conference managers, retail and service staff; all the way through to managing hundreds of staff and multimillion-dollar budgets in operations that have served holiday guests, business travelers, elite athletes, the Prime Minister of China, the President of the United States, and Her Majesty Queen Elizabeth II. Carlos speaks English, Portuguese, Spanish and Italian.
